The municipality of Pateros is famous for balut, or duck’s eggs, eaten when the ducks are half-formed. Balut-making is the main industry of this area and the know-how has been handed down from generation to generation. Pateros either gets its name from “pato”, which means “duck”, or “sapatero”, which means “shoemaker”. Shoe-making is another vital industry here—the municipality is known for the colourful, soft alfombra slippers it produces.
